Creamy Mexican Crockpot Chicken

This week I experimented on another recipe I found on Pinterest. My friend Jen, had also made this and thought it was good so I felt pretty confident about making another mystery chicken dinner for my fam.

The recipe comes from The Larson Lingo blog. Yet another recipe I was drawn to because of the simplicity of it!

INGREDIENTS:
- Bag of frozen Chicken Breast Tenderloins (2.5-3lb bag)
- 8 oz block of cream cheese (don't use Fat Free! 1/3 less fat or regular is fine)
- Can of Black Beans, drained & rinsed. (or Pinto Beans if you prefer)
- Can of Corn, drained.
- Can of Rotel

DIRECTIONS:
  1. Put frozen chicken in the crock pot.
  2. Put Cream cheese on top of the chicken.
  3. Dump in the Black Beans (make sure they are drained & rinsed!!!)
  4. Dump in the drained corn.
  5. Dump in the Rotel
  6. Cover & cook in your Crock Pot on low for 6-8 hours.
  7. Every 2 hours, I stir the ingredients.
  8. You can shred the chicken when it is done, or just leave it as tenderloins. ( I shredded it)

If you let it sit in the crockpot for about 45 min or so after turning the crock pot off, it will become less soupy. You can serve it over rice, make tostadas, etc. Be creative!

Brad's reaction: N/A - He's getting over a "virus" and is on a bland diet.
Rob's reaction: Loved it!
My reaction: Not sure. I had to take a few deviations from the original recipe due to poor shopping on my part. (I normally don't keep canned veggies in the house, and picked up cream corn instead of corn kernals.) But I'm willing to give it another shot with the RIGHT ingredients.

No Photos on this recipe...but check out The Larson Lingo blog for great step by step photos!

Story Telling and an Easter Printable

I'm the short one with the arrow & Heather's the tall one with the arrow
Once upon a time I was a freshman in college. I pledged Kappa Kappa Gamma with about 20-something other fabulous ladies. One of these ladies names was Heather. (For a fun look back at the Fall '95 Pledge Class of KKG - check out the above photo...I know you're all envious of our fabulous hair and attire!)

Back to the story...Years and years passed...we each got married...had children...moved out of California.

Fast forward to today...We both live in the same area... Seperate towns...but very close. Amazing how small the world is!

Anyway, she and her sister-in-law have a blog called HMH Designs. These ladies blog about cooking, sewing and crafting. One of the recent posts was an Easter Printable. It's super cute. I used it for some tags for an Easter gift basket I'm creating. Check out the printables...and better yet their site!

Blog Recommendation: Infinite Variety

A very dear person to me, my cousin Lela, recently started her own blog. Let me lay it out for you first - it's not like this blog, or really a lot that I've seen out there. She's a book lover and has been since she was a very small girl. Her love of books & reading translated to a Bachelor of Arts in English Lit and a Master of Science in Information Science. Lela's dream job...a librarian.

Lela's blog posts are amazingly written - descriptive to the point that you feel like you're there. She shares book reviews and her memories of reading books as a young girl.

I'm not much of a "for fun" reader - I'll admit it. There. I did it. It's not because I don't want to...just a cross between a bunch of reasons you're probably not interested in. But reading her blog makes me want to make a trip to my local library or B&N to find a book for myself to lose myself in while curled up on the couch.

So check her little blog out...Infinite Variety. It's worth it!
