What's Cooking: Veggie Burger Rice and Beans

I have yet to make this...but I have been searching for a recipe that uses veggie burger  in stead of regular hamburger meat. And I didn't want a veggie burger in a bun type of idea.

In January 2011 edition of Fitness Magazine, there is a Veggie Burger Rice and Beans recipe that looks so yummy. The below recipe yields 1 serving and is about 400 calories).

Ingredients:
  • 1 Veggie Burger
  • 1 Tablespoon Minced onion
  • 1/2 Teaspoon Cumin
  • 1/4 Teaspoon Chili Powder
  • 1/4 Teaspoon Salt
  • 1/4 Cup Canned Black Beans
  • 1/4 Cup Thawed Frozen Corn
  • 1 Tablespoon Diced Avocado
  • 3 Tablesoons salsa
Directions:
  1. Cook 1 veggie burger according to package directions. Cut in to bite-size pieces and set aside
  2. Add 1 tablespoon minced onion, 1/2 teaspoon cumin, 1/4 teaspoon chili powder and 1/4 teaspoon salt to low-sodium chicken (or vegetable) stock and use it in place of water to cook 1/4 cup brown rice according to package directions.
  3. Mix cooked rice with 1/4 cup canned black beans, rinsed and drained, and 1/4 cup thawed frozen corn.
  4. Top with chopped veggie burger, 1 tablespoon diced avocado and 3 tablespoons salsa.
