Baked Potato Soup

In my blog roaming I found a recipe for Baked Potato Soup from a blog called Tales and Trials {in this ordinary life of mine}. This is by far the easiest and quite yummiest recipe for baked potato soup I've found! My comments are in red within the recipe below


Ingredients:
  • 3Tbsp. butter or margerine
  • 1 cup finely sliced onion (I buy the precut sweet onion - it's a lifesaver!)
  • 2 Tbsp flour
  • 1 14 oz can of chicken broth 
  • 1lb {2 medium} baking potatoes, peeled and chopped in to 1/2 inch cubes
  • 1/2 Tsp salt
  • 1 Tsp dried basil
  • 1/4 Tsp white pepper
  • 1/4 Tsp black pepper
  • Dash of tabasco sauce (I used chalula sauce)
  • 1/2 Tsp garlic salt
  • 1 cup of half and half
  • The blog author added chopped carrots (I added pre cut julienned carrots which worked out perfect!)

Directions:
  1. In a 2-qt sauce pan, melt the butter on medium heat. add onion and saute for 5 minutes. Be careful not to brown the onions
  2. Sprinkle flour over the onions and cook for about 3 minutes, stirring often.
  3. Gradually add chicken broth. Add potatoes, carrots, salt, basil, white and black pepper, tabasco and garlic salt. Bring to a boil, reduce heat to low and simmer for 20-25 minutes, or until potatoes & carrots are tender. Stir occasionally. 
  4. Stir in half and half and simmer for five minutes.
  5. Garnish - if you like - with sour cream, cheese, chopped green onion and bacon bits.
Step 3: Add Chicken broth, seasoning, and bring to a boil.
Step 4: Stir in half and half and simmer
All done - now serve!
