What's Cooking: Mediterranean Pizza

I'm all about veggie recipes right now. Especially easy to make recipes! This receipe also came in the January 2011 edition of Fitness Magazine. I just ran out of hummus so I haven't tried this yet - but will update with my opinion on this recipe once I try it out. Here you go!

Ingredients:
  • Pita
  • Hummus (try different flavors)
  • cucumbers
  • avocado
  • cherry tomatoes
  • feta cheese

Directions:
  1. Cut cherry tomatoes in half, cut up avocado in bite size peices, peal and cut cucumbers in small chunks.
  2. Mix tomatoes, cucumbers, avocado and feta in a bowl.
  3. Top pita with hummus.
  4. Top hummus with veggie and feta mixture
  5. Enjoy!
