When I first read
this recipe from
The Pioneer Woman's Tasty Kitchen online recipe catalog - I was skeptical. I've honestly never cooked frozen meat in a crockpot until now. The idea of cooking meat from its frozen state scared me. Visions of undercooked chicken went through my head. The last thing we need is a trip to the ER due to e-coli or something. (Yes...I worry about EVERYTHING.) But I decided to try it since it got good ratings and comments (from folks who seemed to know what they were doing in the kitchen).
I made this last night - and it was actually really yummy and
super easy. The family (including my incredibly picky son) want me to make these again.
Ingredients:
- 1 pound frozen boneless chicken breasts or strips
- 1 10 oz can of Rotel diced tomatoes - (I used the kind with green chilis)
- 1 1 ounce package of taco seasoning
Instructions:
- Put frozen chicken in the crock pot
- Dump the Rotel and taco seasoning in the crock pot.
- Cook on low with the lid on for 8+ hours until the chicken is done
- Stir with a fork to shred up the chicken and enjoy!

Sounds good! I'm trying a green chili pulled pork for tacos in the crockpot today! I'll let you know if it works!
