Ingredients:
- 1/4 Cup Rice Vinegar (Cider Vinegar may be used for a stronger flavor)
- 2 Tbsp Sugar
- 1/2 - 1 onion, Sweet or Red
- Minced Fresh Parsley
Slice cucumbers and onions thin. Sprinkle with salt and let stand a while, no more than 2 hrs.
Mix 1/4 cup Rice Vinegar - not seasoned rice vinegar & 2 tbsp sugar until dissolved. Stir parsley, vinegar & cucumbers. Let stand for as long as possible, overnight is best.
